That 70’s Salad

That 70’s Salad

 Sorry but that’s all that goes through my head when I think about this salad! I’ve mentioned before that the Green Goddess Dressing on this salad was popular in the 70’s and thus this salad was born! As with any salad (and recipe) feel free to switch up the veggies as you like.

Serves 4

2 Medium tomatoes, sliced into wedges

½ English cucumber, sliced (washed and skin left on)

Handful of fresh parsley, torn

Salt

Pepper

½ Cup of Green Goddess Dressing

–  Mix all of the veggies and parsley together on a serving platter; season with salt and pepper.

–  Top with the Green Goddess Dressing.

–  Serve immediately.

Notes:

  1. If you’re making this ahead of time, hold off on seasoning with salt and pepper otherwise your tomatoes will go smushy.
