

Steak and Goat Cheese Salad with a Creamy Scallion and Lime Dressing
OMG y’all it’s almost Spring! Â I mean while technically it IS Spring I live in southern Ontario where it’s not unheard of to have a blizzard in May. Â That’s right… freaking May!!!! Â So when an almost warm day hit the other day I was all over two things:
- Â BBQ
- Salad
So digging it 🙂
(That’s one of the first blog pics I ever took!!! Â It’s blurry because I put my camera too close to an open flame and almost melted the lense!). .
There is nothing like a crispy, crunchy salad ,then a salad with a BBQ steak…
But then you add crunchy cucumber slices and fresh tomatoes and then you add THE most delicious, creamy goat cheese in town. Â Then, as if that’s not enough… you add a homemade Lime-Scallion Dressing; something so delectable you dream about it…
Here you have my first (of what will be many this Spring and Summer) Entree Salads; this will rival any and all Dinner/Entree Salads out there.  Take it as a promise.  Take it as a challenge.  I promise you, you’re going to flip for this dish 🙂

- Total Time: 15 minutes
- Yield: 4-6 1x
Ingredients
2 8 oz Sirloin Steaks, cooked according to my How to Grill the best steak EVER guide
1 Head Red Leaf Lettuce, washed and broken into bite-sized pieces
1/2 English cucumber, washed and sliced (skin left on)
2 Medium tomatoes, sliced into wedges
1/2 of a 140 g package of low fat goat cheese
1/4 – 1/2 Cup Whipped Scallion and Lime Dressing
Salt
Pepper
Instructions
Cook the steaks according to my How to Grill the best steak EVER guide; set aside to rest
Using a large serving platter, lay the lettuce first, then top evenly with the cucumber, tomato and goat cheese.
Slice the rested steak (at least 5 minutes so the juices don’t run out) and place on the salad.
Drizzle the salad dressing on top and then season the salad with salt and pepper.
Serve immediately.
Notes
- Â Go with whatever lettuce you prefer.
- I cooked my steak to medium Mike likes it that way.
- Grilled chicken or fish would work really well too 🙂
