Valentine’s Day Dinner Menu – 2

Valentine’s Day Dinner Menu – 2

Here we are, the night before Valentine’s Day… don’t panic!  Here is another completely delicious and impressive meal; my second menu in my two-part menu inspired by Valentine’s Day.  Honestly, at this point in my life I get more annoyed with how much money Mike has to spend on roses that i actually prefer he doesn’t buy them!  We have a nice-dinner-and-card-only pact; $100 for roses makes me pull my hair out!!! I still maintain this holiday is only important when you’re single.

Anyway, back to (a romantic, incredible dinner, perfect for any and all occasions) dinner;

To start, Scandinavian Shrimp and Avocado Salad

Followed with Linguine with Creamy Roasted Tomatoes and Cremini Mushrooms

with Braised Beef Ribs

With Chewy Chocolate Chocolate Chip Cookies for dessert

Or again , go with strawberries and Champagne…

Just don’t stress!  This is going to be an incredible meal 🙂

Serve the Scandinavian Shrimp and Avocado Salad to start and then serve everything else altogether!

Notes:

  1.  Cook the Braised Ribs first according to recipe directions and then cover to keep warm.  Then roast the veggies for the pasta, trust me these ribs are that amazing, they’ll wait for the pasta.
  2. Again, these recipes are for 4 so feel to cut them in half or bring leftovers for lunch… I love leftovers for lunch 🙂
