

Spicy Coleslaw
Now this recipe is bad-a💤. This is spicy, crunchy, a little sweet and so amazingly tasty. Not bad for low fat!!!! This is the recipe I came up with to compliment the pulled pork but this is absolutely incredible as a stand-alone side 👍🏻
Serves 8
¼ Cup light mayonnaise
¼ Cup fat free sour cream (or Greek yogurt)
1 tbsp white vinegar
1 tbsp wholegrain mustard
1 tsp sugar
½ tsp salt
½ tsp pepper
397 g bag of prepared coleslaw
1 Small shallot, sliced into sticks
1 Small red chilli pepper, sliced (including seeds)
Using a large bowl, whisk together the mayonnaise, sour cream, vinegar, mustard, sugar, salt and pepper.
Add in the coleslaw, shallot and chilli pepper; mix well to completely coat the veggies in the sauce.
Cover and refrigerate for 2-3 hours (up to a day) before serving.
Taste and adjust seasoning.
A recipe for Spicy Coleslaw; its sweet with heat, I came up with to compliment pulled pork but this is incredible on its own.
