Instant Pot Hot Beef Sandwich

Instant Pot Hot Beef Sandwich

My sister gave me an Instant Pot for Christmas 🎄  I was pumped… and scared.  Pressure cookers explode, right???  Well, I’m very happy to report (and relieved) that Instant Pot is very safe and easy to use.  I tested my most favourite slow cooker recipe and did it in the Instant Pot in a tenth of the time.  Yes!  A tenth of the time.  I love my Instant Pot and am absolutely loving coming up with new ideas to use it.  Thank you to my very amazing sister 😘 

Serves 4

1 tbsp extra Virgin olive oil

453 g (1 lb) beef cubes

1 Large onion, sliced in sticks

3 Cloves garlic, crushed

1/4 Cup red wine

2 Cups sodium-reduced beef stock

2 tbsp tomato paste

1/2 tsp salt, plus more

1/4 tsp pepper, plus more

Set your Instant Pot to sauté and add in the olive oil, when it’s hot add the beef cubes; season with salt and pepper.

Brown the beef (working in batches if needed).

Add in the red wine, gently scraping the bottom of the pot to release any yummy bits.

Then add in the onion, garlic, stock, tomato paste, the 1/2 salt and 1/4 tsp pepper; mix well.

Cover with the lid and lock it, ensure the valve is set to sealing and then set the pot to manual for 45 minutes.

Do a quick release.

Taste and adjust seasoning before serving on your favourite bread.

    What cut of beef do you use for your cubes?

      Hey!

      I just buy “beef cubes” or “stewing beef cubes” but they are generally tougher cuts of beef (therefore more flavourful) like chuck or round but you can use a steak too (pricier though)…
