French Onion Baked Chicken
Does anyone else hear Dave Chappelle’s voice when they say the word “chicken’? Chicken. Here I thought I was going to order the chicken because its delicious but apparently I’m genetically predisposed to liking the chicken.
Chicken.
Sorry but I’ve been hearing that in my head (no, not like… I see dead people) since like 2006, lol.
In 2006 I was a waitress, bartender and a Volunteer Probation Officer – kinda like auxiliary police but no fun uniform 🤦♀️
Okay if you don’t get my references here then you do NOT watch enough tv. That movie rocked my world. Maybe it was my age or maybe M Night Shyamalan is a freaking genius. Except for Glass, the Happening, The Village and unbreakable.
Sorry they just weren’t my jive.
Don’t forget Mr Chappelle, arguably the funniest man on the planet.
Have you seen Conair!?! Omg, did John Cusack wear socks with those sandals? I can’t remember, I thinkI blocked them out because they were that terrible. Looking back on that movie, don’t you think Nicholas Cage’s character was a cutie-patootie????
Like I’ve mentioned before, I’m old (that’s a southern drawl in my head now too… I’ve been watching Justified lately and when I said, “I’m old”, I heard Boyd Crowder’s voice).
Maybe its a brain tumour.
Maybe this is just old age.
What does this have to do with chicken you ask, specifically this baked chicken dish?
Nothing.
Absolutely nothing.
I just like to share my personality sometimes 🙂
When I was younger I used to work as a bartender and server so I’d work until at least 4 am.
I’d work and socialize simultaneously so when it was my day off (which was once a week, most weeks) I’d want to cocoon at home with a nice meal and a nicer bottle of wine. Who am I kidding!?! Lol, I could NOT afford anything nice in terms of wine. I was saving up to buy my first house. Which I did, by the time I was 28 😎
Not bad for a single gal bartender just trying to manoeuvre this thing called life.
Okay, I got sidetracked again.
My point, in a roundabout, convoluted way, is that my life was usually chaos so “my time” was usually spent alone, quietly at home. I’d workout, then make a great meal and watch tv.
This habit stuck.
I don’t like gong out.
I’m a total homebody and when people question it, I feel sad for them because they obviously never experienced the rockstar life I did 🙂
So now, I’m 43.
I’m a mother and wife.
I work full time.
I work a really chaotic work schedule now and if I’m not at work then I’m home with my family. My kids and I like to pile into our bed and watch a movie in front of the fire but honestly, they’re such great kids they probably do it to make me happy. I honestly have no idea what I’ve done to deserve such fantastic children ❤️
So while other people get excited about going out to concerts (although a concert in the park is ah-mazing) and fancy restaurants, I get excited about making my family a nice dinner or hosting a dinner party.
Last weekend we hosted a dinner party…
We served:
Spaghetti and Meatballs
with…
Greek-ish Salad
and… Cheesy Garlic bread (recipe coming soon!).
So back to chicken.
I get excited about chicken.
Chicken.
This is my French Onion Baked Chicken.
This is how you make it:
Preheat your oven to 425.
Lay the chicken breasts in a deep dish such as a lasagna pan.
Rub each breast with a tbsp of the miracle whip, totally covering the meat.
Season each breast with salt, pepper, onion powder and the soup mix; take care to reserve half the pouch for the second side.
Flip the chicken breasts and repeat for the second side.
Transfer to the oven and bake for 25 – 30 minutes.
Let the chicken rest for about 5 minutes before serving.
Its so simple and yet its so delicious.

4 Boneless, skinless chicken breasts
1/2 Cup light miracle whip, divided
Salt, to taste
Pepper, to taste
Onion Powder, to taste
1 Pouch of Onion Soup Mix

Notes
- Feel free to go with your fav mayo but miracle whip has less fat and calories than mayo and I find the tang of the miracle whip blends nicely when you cook with it.
