Easy Roasted Vegetables

This is one of those “recipes” that’s dependent on your preference and the veggies you have on hand.  I promise you’ll come back to this method all the time.  It’s fast enough for a weeknight dinner but elegant enough that its sure to impress at any special occasion.

This is how you make it:

Preheat your oven to 425

Combine all the ingredients on a baking sheet.

When the oven’s ready, roast the vegetables for 20 minutes, giving the pan a quick shake at the 10 minute mark.

Serve immediately 🙂

Description

Without a doubt, this is the easiest side dish you can prepare.   It accents the natural flavours and texture  in every vegetable you choose!


Ingredients

Scale

1 Bunch of broccoli, florets only

1 Medium pepper, sliced into sticks

227 g mushrooms (any of your choosing), sliced in half

1 tbsp extra virgin olive oil

Coarse salt, to taste

Pepper, to taste


Instructions
