

Creamy Avocado Dressing
This is an incredibly gentle salad dressing; you get such creaminess from the avocado and a hint of onion flavour from the scallions. This would also work as a dip or a spread on your favourite sandwich. I’m feeling deflated as I write this recipe; I created it when it was hot and the sun was shining but now there is rain and it’s really cold and it feels like November. Who says Global Warming isn’t a thing 🙁
Makes just over a cup
1 Medium ripe avocado, peeled and flesh removed
1 Green onion (scallion), peeled
½ Cup fat free yogurt
½ Cup low fat buttermilk
The juice of one lime
1 tbsp cider vinegar
½ tsp salt
½ tsp pepper
Combine all ingredients in a blender or food processor and mix until smooth; taste and adjust seasoning.
Serve cold or at room temperature.
Notes:
- The avocado will still oxidize and discolour so try to make this dressing freshly before serving.
