Stuffed Poblano Peppers
This is everything that is great and amazing about a beef burrito but it’s stuffed into a roasted Poblano pepper then topped with cheese and finally baked to perfection.
In case you’ve never had a Poblano pepper, it tastes just like a jalapeño pepper without the heat but it’s much firmer than a sweet bell pepper. That’s why roasting the pepper first is key.
This is how I did it:
Roast the poblano peppers at 425 for 20 – 30 minutes.
Meanwhile brown the beef then strain the fat. Return the beef to the pan then add in the onion and taco seasoning, mix well. Add in the water, bring it to a boil then drop the heat until a slight sauce forms.
In a large bowl, mix the beef mixture, rice, salsa and half the cheese; season with salt and pepper.
Stuff each pepper half with the beef filling.
Top evenly with the cheese.
Bake for 20 minutes at 350.

6–8 poblano peppers, halved and seeded
375 g Lean ground beef
1 Small onion. diced
1 tbsp taco seasoning
1/2 Cup water
1 Cup cooked rice (1/2 cup uncooked)
2 tbsp salsa
1 Cup grated cheddar cheese
Salt
Pepper
Instructions
