Valentine’s Day Dinner Menu – 1

Valentine’s Day Dinner Menu – Menu Idea 1

I personally find that Valentine’s Day only matters when you’re single, am I alone here!?!  In case I’m wrong (I’m sure it’s happened) here is my first menu idea to help you prepare a romantic and delicious meal for your love… Or your friends if you’re single!  Stay tuned because in a few days I’ll be posting another menu idea.

These recipes are still portioned for 4 so feel free to cut them down or enjoy leftovers for lunch the next day!

And as Rachel Ray (yes, Rachel Ray!) has stated numerous times; two garlics cancel each other out!  Meaning don’t be scared to use garlic in a recipe for date night because you’ll both have garlic breath 🙂

Now on to the menu, to start:

Scallops Piccata

honey mustard vinaigretteServe the Scallops Piccata to start and then serve everything else altogether!

When roasting the Smashed Potatoes, cook them at 400 instead of 425 so that they can cook at the same time as the chicken; you won’t need to adjust the cooking time either.

Notes:

  1.  Give yourself a break and go with fresh strawberries and maybe some champagne for dessert.
