Mushroom Stuffed Chicken Breasts

Mushroom Stuffed Chicken Breasts

I know, I know, I go on about how delicious and easy my recipes are and how they’re sure to impress anyone and everyone.  Well, it’s true!  This chicken is simple, delicious and did I mention easy?  By stuffing the chicken it stays moist and tastes decadent from the butteriness of the mushrooms but it’s just that – from the mushrooms so it’s healthy too 😆

Serves 4

4 Bone-in Skinless Chicken Breasts

1 Batch of my Steakhouse Mushrooms

1 tbsp extra virgin olive oil

Salt

Pepper

Preheat your oven to 400

To prepare the chicken breasts, use a very sharp knife and cut into the thickest part of the breast toward the thinnest, just in between where the meat attaches to the bone.  Then gently open a pocket in the breast using your finger, careful not to tear the pocket open.

After all the breasts are prepped, evenly stuff each one with the mushrooms (when they’re cool enough to handle of course!)

Transfer the stuffed breasts to a roasting pan and evenly drizzle the olive oil along the top of each breast; season with salt and pepper.

Bake for 40-45 minutes, until the chicken is cooked through (if you’re using a meat thermometer then the temperature should reach 165).

Serve immediately 😊

Notes:

1.  Using bone-in chicken breasts is a great way to get a feel to stuffing chicken because the bone helps protect the pocket from tearing.
