Meal Plan Week Three

Here we go… Already!?!  Week 3.  It’s amazing how time flies when you’re having fun, right?  Or completely sleep-deprived because your two year likes to wake up early… Really, really, really early 😴

I’m totally enjoying these meal plans.  I hope you’re seeing the logic behind them and maybe are even incorporating your own.  I’d love to hear any of your own strategies and your thoughts on what I’ve come up with 😊

Monday:

Pot of Chili ; double up on the recipe and reserve a 1/4 of it.  The rest can be frozen or lunch!

Tuesday:

Shrimp Teriyaki with rice (cook an extra cup of rice) so 1 1/2 cups raw total, reserve half

Wednesday:

Chili Noodle Bake

with a Green Salad (with the vinaigrette); When you make the Green Salad, prep enough for 2 salads and wrap half (enough for 1 salad) in the fridge for Friday.

Thursday:

BBQ chicken

with Caesar salad; simply toss some romaine lettuce with the dressing (to taste; tablespoon by tablespoon),  croutons, capers and Parmesan cheese.

Friday:

Spicy Bean Burritos (use the leftover cup of rice from Tuesday)

with a Green Salad (use the salad you prepped on Wednesday (again, with the vinaigrette).
