Pickled Beets

Tis the season to figure out what to do with the abundance of veggies we’re blessed with.  With that said I must confess I’m not the biggest beet fan.  I got these ruby gems in my veggie order and decided I’d try pickling them.  You know what???  Not bad, not bad at all my friends.

Pickled beets take minutes to prepare and they’re delicious.  I totally recommend giving this a try.

I trimmed the greens, washed them the same way I do with kale and made a pesto with it.  I was going to write a recipe on it but honestly, I’ve probably beat that drum enough lately.  Follow the Kale Pesto  Recipe but use the beet greens in place of kale.Pickled Beets I LisaGCooks.com

Place the unpeeled beets in a pot and cover them with water.  Bring the pot to a boil then drop the heat to medium-low and simmer the beets for 30 minutes.

When the beets are drained and cool enough to handle, peel and slice them and add them to a 750ml or 1L jar.

Using the same pot (save on those dishes!), combine the remaining ingredients and bring them to a boil.

Pour the boiling water into the jar with the beets.

Put a lid on the jar and turn the jar upside to make sure all of the beets are submerged in the pickling brine.

Leave the jar on the counter to come to room temperature then place in the fridge for at least 12 hours.

Description

Ingredients
