Marinated Barbequed Pork Loin
Back in the day, my children and I would spend the day at my parent’s house once a week where we’d also have dinner together. Â I didn’t realize until now, how much I miss those visits.

Marinated Barbequed Pork Loin

Description
A simple recipe for a pork roast marinated in a tangy, garlicky marinade with a hint of rosemary then grilled perfection.
Ingredients
1/4 Cup extra virgin olive oil
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
1 tsp sodium-reduced soy sauce
3 Cloves garlic, crushed
1/2 Sprig Rosemary, leaves only, coarsely chopped
1/2 tsp salt, plus more
1/4 tsp pepper, plus more
1.5–2 kg/3-4 lb pork loin roast
Instructions
In a deep bowl (large enough to fit the roast) whisk together the oil, balsamic vinegar, Dijon, soy sauce, rosemary, ½ tsp salt and ¼ tsp pepper.
Add in the roast, completely coating the meat in the marinade. Cover and refrigerate for 1-2 hours. Rotate the pork in the marinade at least once.
Barbeque at 375 (medium-high) for 18 – 22 minutes, flip the roast halfway through. The roast is cooked when the juices run clear and the internal temperature reaches 160 (or medium) although I prefer my pork cooked to medium-well.
Let the roast sit for 10 minutes before slicing it.
You can season lightly with salt and pepper just before serving.
