Poached Cod with Spinach and Broccoli

Poached Cod with Spinach and Broccoli

This dish is so healthy and probably sounds bland but trust me this dish is awesome.  There is so much food here and you don’t even realize it.  This is really filling and will keep you full for a long time.  You really don’t need a starch or carb here but if you want one I would recommend just a nice piece of crusty bread.

Serves 4

1 Large onion, sliced in half moons

4 Roma (plum) tomatoes, cubed

2 Cloves garlic, crushed

3 Cups sodium-reduced stock, or water

¼ Cup white wine

1 lb fresh cod; cut into 4 portions

1 227 g bag spinach, washed

1 bunch broccoli cut into florets

Salt

Pepper

–  In a large pot (with a tight fitting lid) bring the stock, wine, onions, tomatoes, and garlic up to a boil; season with salt and pepper.

–  When the liquid is boiling place the fish in the pot on top of the tomatoes and onions, season with salt and pepper.

–  Add the spinach to the pot on top of the fish; season with salt and pepper.

–  Immediately after adding the spinach, add the broccoli florets and again, season with salt and pepper.

–  Cover the pot with a lid; drop the heat to medium low and simmer for about 7 minutes.

–  Taste and adjust seasoning.

–  Serve immediately.

Notes:

  1. You can use vegetable, beef, chicken or fish stock; whatever you have on hand
  2. If you don’t have stock, just use water
  3. If you are not adding wine, add a ¼ of whichever liquid you are using in its place.
  4. It would be fun to add some heat here if you like; add chili flakes when you add the liquid to the pot.
  5. To make these flavours pop it would be fun to squeeze the juice of half a lemon when the fish is cooked
  6. Serve right from the pot!
