Grilled Corn

 It’s not the healthiest vegetable but oh man is it good!  In fact I’m pretty sure corn is synonymous with summer for a large part of the population.  So how does a girl get around the fact that this ‘vegetable’ definitely falls in the naughty category?  Well, I have two strategies: one, skip the butter!  The corn has tons of flavour without the butter and once you try it like this you’re going to realize you aren’t missing anything really.   Two, count the corn as your starch, not your veggie and serve another veggie with it instead of a potato or rice dish.

Serves 4

4 Ears of corn

–  Turn your barbeque to medium high; about 375

–  Place the clean corn on the grill, rotate it every few minutes, you want some black on the corn and you will know it’s cooked because the corn turns a darker yellow colour.

Notes:

  1. Season with salt if you so desire.
