Copycat Rotisserie Chicken

Here I present, my quintessential, updated, roasted chicken method. There are two things to pay attention to. First the calculation that will be provided is PERFECT! Follow the formula, and I promise you, that you will have the juiciest Roasted Chicken. Full stop.

The second consideration is that this is inspired by Costco Chicken, but I used a lot more green herbs (flavour), so the colour is different.

Are you ready??? This chicken is THAT good!

The Formula

Cooking Time (minutes) = Weight of Chicken (lbs) x 20 + 15

1.706 KG is 3.75 lb (2.2 pounds in a KG)

3.75 lb x 20 = 75.06

Add 15 = 90.06

(I do not round up, but you can).

I roasted the chicken at 350 degrees, for 90 minutes.

Then I let it rest for 5 minutes, without covering it.

This is how you make it

Combine the Italian seasoning, paprika, garlic powder, ½ tsp salt, and ¼ tsp pepper, then add in the olive oil to form a paste-like texture.

Lightly season the cavity of the chicken with salt and pepper, then add in the bay leaves.

Transfer the chicken to a roasting pan.

Rub the seasoning blend evenly all over the chicken.

Season with coarse salt.

Transfer to the 350-degree oven, and roast according to the formula above. The weight of the chicken will be on the tag.

Once the chicken has finished roasting, let it rest for 5 minutes (uncovered) before carving.

Description

A recipe for Copycat Rotisserie Chicken, inspired by Costco, but with more Italian Seasoning. And I share the winning formula for Roasting the perfect chicken – Every time!

Ingredients

Scale

1 tbsp Italian seasoning

1 tbsp Paprika

1/2 tbsp Garlic powder

1/2 tsp Salt, plus extra

1/4 tsp Pepper, plus extra

2 tbsp Extra virgin olive oil

3 Bay leaves (I used dry, but fresh will work)

Coarse salt, to taste

Instructions

Notes

  1. You can add a little bit of the pan juices to the chicken, after it has been cut up.
  2. Did you notice there’s no gravy? That is because you do not need it!
