Baked Mustard Chicken

OMG! This is ridiculously easy and oh so delicious! This is great for an evening dinner or even for entertaining.

Description

Healthy, delicious Baked Mustard Chicken.


Ingredients

Scale

2 Cups whole wheat bread crumbs

2 tbsp extra virgin olive oil

¼ Cup fresh chopped parsley (a small bunch)

1 tsp garlic powder

1 tsp sweet paprika

1 tsp salt

½ tsp black pepper

¼ Cup Dijon

4–6 Skinless, bone-in chicken breasts


Instructions

Preheat your oven to 400.

In a bowl, combine the breadcrumbs, the olive oil, parsley, garlic powder, paprika, salt and pepper; set aside.

Evenly coat all the chicken breasts in the Dijon mustard and then press the breadcrumb mixture evenly on to each chicken breast, press the coating down to ensure it adheres.

Place the chicken breasts on a roasting pan.

Bake the chicken breasts for 40-45 minutes, until the breadcrumb mixture is slightly darkened.

Notes

  1. You’ll know the chicken is cooked when the meat is pierced and the juices run clear.
  2. If you’re using a meat thermometer then you’ll want the temperature to read around 165.
