I have been invited to help promote awareness of Eye Health. May is Healthy Vision month and the Macular Degeneration Foundation has arranged a Blog Party to share strategies and recipes to combat Macular Degeneration. According to the foundation, Macular Degeneration is the leading cause of legal blindness with a staggering 10 million Americans suffering from this illness. There is no cure but a diet rich in eye healthy nutrients is said to help reduce the risk of developing it.
Here is a list of some of my recipes that provide the nutrients and vitamins that help contribute to healthy eyes:
Corn and Tomato Salad with Lime Vinaigrette
Poached Shrimp with Asparagus, Tomatoes, and Corn
Barbequed Salmon with a Spicy Sesame-Soy Glaze
Spinach, salmon, extra virgin olive oil, tomatoes, corn and shrimp are some of the top foods to combat eye illness and luckily for me, they are some of my absolute favourite things to eat! Let’s bring awareness to eye-health.
