Sweet Onion Marinated Chicken

This is a dish that I made at my parent’s house last week.  I have to point out, because I think it’s first time in history, there’s NO GARLIC in this recipe.  It was odd.  I still feel not right about it.  I honestly think this is the first time I haven’t used garlic in a marinade recipe.   So weird (but good!).  I made this with Lazy Man’s Potato Skins (recipe coming soon!) and we had it with a fresh Green Salad; yum!

A simple recipe for a sweet and tangy marinade that comes together in minutes. Then the chicken is grilled to melt-in-your mouth perfection.

 

 

 

This is what you’ll need

2 tbsp extra virgin olive oil

2 tbsp Dijon mustard

2 tbsp fresh parsley

1 tbsp brown sugar

1 Small shallot

The juice of half a lemon

¼ tsp salt, plus more

¼ tsp pepper, plus more

4 Boneless, skinless chicken breasts

 

This is how you make it

Combine the olive oil, mustard, parsley, brown sugar, shallot, lemon juice, salt and pepper in a food processor or blender; puree until completely smooth.

Rub the marinade (mustard and onion puree) all over the chicken breasts, completely coating them.

Let the chicken marinate (in the fridge) for 1-2 hours, up to 24 hours ahead of time.

Grill according to My Guide for Awesome Grilled Chicken.

As the chicken is grilling, lightly season both sides of the chicken breasts, while there is salt and pepper in the marinade, the chicken still needs to be seasoned as it’s cooking.
