Honey-Lime Marinated Grilled Chicken

I’m completely torn.  I love this time of year, I look forward to the cool nights and all the amazing holidays about to be celebrated but I also feel sad.   I always feel like something beyond everyone’s favourite time of year is over.  Am I alone here?  With that said I must point out that as a proud Canadian my family barbecues year round, even in a blizzard.  So as I reflect on my amazing summer I do take solace in the fact that I’ll probably be eating this dinner next February 🙂

A healthy recipe for a sweet and tangy marinade perfect for every occasion, protein and season, yes it really is that good!

 

 

This is what you’ll need

1/4 Cup extra virgin olive oil

Zest of one lime

Juice of one lime

3 Cloves garlic, crushed

1 tsp honey mustard

1/2 tsp salt

1/2 tsp pepper

4 boneless, skinless chicken breasts

 

This is how you make it

Whisk together the extra virgin olive oil, lime zest, lime juice, garlic, honey mustard, salt and pepper.

Coat the chicken breasts in the marinade and let them marinate for 1 hour up to 4.

Shake excess marinade off and then cook according to My Guide for Awesome Grilled Chicken.

Notes:

  1. This marinade will work for any bone-in chicken pieces too.
