Cheesy Potato Wedges with Pulled Pork

So I’m going to start this with saying portion control is key; throw in a Green Salad to complete the meal and this is totally do-able as a dinner for 4-6 people.  Yes; potatoes, cheese and pulled pork but considering how bad the numbers could be I think we’re good 😊.

Now I’m going to tell you a story, picture it; Toronto in February, Mike has hockey that night and he’s pumped (holla to the Golden Girls).  So we sat down to eat with this exact plate and a salad.  Mike for some reason thought this was his plate, so I played along and I stuck to the salad.  With 2/3 of the plate gone, he started getting woozy; picture meat sweats (we all know what I’m talking about; picture John Candy and the Great Outdoors).  He did it though, he cleaned the plate.  Then Mike said he couldn’t believe how full he was.  I said, “well you did just eat 6 potatoes”… I wish I had a camera to take a picture of his face 😂😂😂. Poor guy had to skate that night 😖

Serves 4

1 Batch of Homestyle Potato wedges 

1 Cup Pulled Pork

1 Cup grated old cheddar cheese

1-2 tbsp Ranch dressing (optional)

2 Green onions, sliced (optional)

Lay half the potato wedges on a plate (or baking sheet) and then top with a 1/4 of the cheese.  Then top with the remaining cheese and then the pulled pork.

Either microwave the plate for 30-45 seconds or bake on the baking sheet until the cheese is melted and bubbly.

Top with the ranch and then the green onions, if using.

Notes:

  1. Another putting-it-all-together recipe!!!!!!
  2. I used leftovers of the Pulled Pork, just planned ahead and made some extra when I made it 🙂
