Apple Cheddar Christmas Loaf with Thyme 

This is the perfect addition to everyone’s holiday breakfast or brunch feast.  This bread which kind of has a cake texture is decadent, delicious and so ridiculously simple.  You can even make this the day before and then on Christmas morning warm it in a low oven just before serving.  I truly hope everyone has an amazing holiday season, whether you celebrate Christmas or not, this is a magical time of year for our family and I hope that magic touches the lives of everyone else too.

Makes 8 thick slices

1 ¾ Cup all purpose flour (I used white… omg… but it’s Christmas!)

1 tbsp baking powder

½ tsp salt

½ tsp dried thyme

2 Large eggs (at room temperature)

½ Cup apple juice

1 tbsp cider vinegar

¼ Cup canola oil

1 ½ Cup grated old cheddar (reserve 1-2 tbsp for topping)

1 Medium royal gala apple, cored and grated

A few fresh thyme sprigs for garnish

Preheat your oven to 350.

Whisk together the flour, baking powder, salt and dried thyme; set aside.

Using a large bowl, whisk together the eggs, apple juice, vinegar and oil; whisk until frothy.

Fold in the grated cheese and apple.

Combine in the flour mixture, working until completely mixed,

Transfer to a greased 4 x 8 loaf pan; tap the pan when the batter is in to make sure it settles evenly.

Top with the reserved cheddar cheese and the thyme sprigs.

Bake for 40-45 minutes, until the tester (toothpick) comes out clean.

Let the loaf rest in the pan for 5 minutes and then turn out on to a cooling rack (you may need to run a knife along the edges to get it out).
