Planning ahead is key to meal prep.  My kids will ask me on Sunday what we’re going to have for dinner the following Thursday and I always have an answer!

 

Monday:

Spicy Mediterranean Roasted Chicken Breasts

Prepare and marinade the chicken on Sunday night and store in the fridge until you’re ready to bbq!

Serve with…

Asian Style Vegetable Stir Fry

and rice, cooked according to package directions.

Tuesday:

You’ll have enough leftovers for another meal!

Italian Spice Rubbed Grilled Chicken

Wednesday:

Pasta Pesto alla Carlofortina

Green Salad

(prep enough for two salads and store half for Friday’s dinner).

Thursday:

Tortellini Soup

Serve with…

Crusty Bread

As always you can go with store-bought bread.  Simply throw a loaf of bread in the freezer the day you buy it and take it out an hour before you sit down to eat, it’ll be just like fresh baked, oooh warm it slightly in the oven!

Friday:

Butter and Garlic Baked Scallops

served with the remaining…

Green Salad

and the leftover…
