Planning ahead is key to meal prep.  My kids will ask me on Sunday what we’re going to have for dinner the following Thursday and I always have an answer!

Monday:

Steamed Mussels in White Wine and Garlic

Arugula Salad with Lemon – Parmesan Vinaigrette

Crusty Bread

As always you can go with store-bought bread.  Simply throw a loaf of bread in the freezer the day you buy it and take it out an hour before you sit down to eat, it’ll be just like fresh baked, oooh warm it slightly in the oven!

Prepare and marinate Tuesday’s dinner.

 

Tuesday:

Sweet Onion Marinated Chicken

Prepare and marinated tomorrow’s dinner.

Wednesday:

Ultimate Steak marinade

Asian Style Vegetable Stir Fry

and rice, cooked according to package directions (1 cup uncooked equals 2 cups cooked – this what I make).

Thursday

Spicy Skillet Lasagna with a Rose Sauce

GREEN SALAD

(prep enough salad for two meals and then store half in the fridge for tomorrow’s dinner).

Pizza Dough

for Friday’s dinner but as always you can go with store-bought fresh dough in a pinch but trust me, this dough comes together in minutes – especially if you have a stand-mixer.

Homemade Pepperoni Pizza
