I’m blessed with family that lives in eastern Canada.  Home of THE most amazing fish, ever.  Enter scallops.  Delicious.  Healthy.  Lean.  Easy.  Did I say delicious already?  Here I’ve seasoned the scallops with Cajun seasoning to balance against the cool crunch of the lettuce and the creaminess of the homemade Caesar salad dressing.  We’ve all heard of the Chicken Caesar Wrap, why not a Cajun Scallop Caesar Wrap?!? 🤔🤔🤔

A recipe for Cajun-seasoned scallops, served with homemade Caesar salad dressing, crispy lettuce and a warmed wrap 🙂

 

This is what you’ll need

4 Soft taco shells (warmed)

Romaine lettuce

1 Batch of Spicy Scallops

1 Medium tomato, chopped

1 Batch of Homemade Caesar Dressing 

 

This is how you make it

To assemble, lay some of the lettuce of each shell, top evenly with 4-5 Spicy Scallops, then top with the tomato, and then some of the Homemade Caesar Dressing (to your preference).

Might I suggest

A fresh salad with my Red Wine Shallot Vinaigrette with Honey

as a side because a Caesar salad would too much of a good thing 🙂
