Planning ahead is key to meal prep.  My kids will ask me on Sunday what we’re going to have for dinner the following Thursday and I always have an answer!

 

Monday:

Lemon/Soy Flank Steak

Prep the steak and marinade on Sunday afternoon and leave in the fridge to marinate for up to 24 hours.

Serve with…

Melting Potatoes

and…

 

Tuesday:

Grill Baste

Grill 2 extra chicken breasts; season with salt and pepper only… this will be for Thursday’s dinner…

and…

Green Salad

…prep enough for two salads and then store half in the fridge for Friday’s dinner.

 

Wednesday:

Open-Faced Lobster Rolls

serve with…

Asian Tomato and Cucumber Salad

The acidity in the tomatoes will cut through the buttery lobster 🙂

 

Thursday:

Moroccan Fettuccine with Grilled Chicken

use the leftover chicken from Tuesday….

and the remaining…

Green Salad

 

Friday:
