Copycat Alice Springs Chicken

Have you ever had Alice Spring’s Chicken?  I haven’t 🤣. I just keep seeing recipes for it so then I set out to make my own version.  I still consider it copy cat though.

I tried sautéing the mushrooms in some of the bacon drippings but honestly I couldn’t taste a difference so just sauté your mushrooms anyway you like.  I find the mushrooms make any dish so decadent and they’re virtually fat free (except for the bacon fat I used 🙄).

If you have tried the real-deal Chicken dish, please let me know how mine stacks up against it ❤️

I served this with Buttermilk Mashed Potatoes!

Copycat Alice Springs Chicken


Description

A lightened up recipe for Copycat Alice Springs Chicken: a boneless, skinless chicken breast coated in a tangy sauce then topped with cheddar cheese, buttery mushrooms and crisp bacon then baked to absolute perfection!


Ingredients

Scale

1/4 cup mayonnaise or miracle whip

1/4 cup honey mustard

1 tbsp of your favourite smoky bbq sauce

4 boneless, skinless chicken breasts

Salt, to taste

Pepper, to taste

4 strips of cooked bacon, crumbled

227 g sliced mushrooms, sautéed

1 Cup grated old cheddar cheese


Instructions

Preheat your oven to 375

Combine the mayonnaise, honey mustard and bbq sauce; set aside.

Season the chicken breasts on both sides.

Coat the chicken breasts on both sides with the mayonnaise/mustard sauce.

Place in an oven safe dish (i use a lasagna pan).

Bake for 20 minutes then top the chicken breasts evenly with the bacon and mushrooms and finally the grated cheese.

Return to the oven for another 5 minutes (longer if the cheese needs more time to melt.

Let the chicken rest in the casserole pan for 10 minutes then serve immediately.
