The Inspiration

I’ve been formulating this recipe for a while now.  I was thinking of all the different ways I could make the vinaigrette; creamy and dreamy of course.  Then it occurred to me that I’ve never had a tortellini pasta salad before 🤷‍♀️

There’s a recipe I’ve always wanted to try; cheese-stuffed tortellini with a creamy Rose Sauce.

Omg!!!

That’s so decadent!

I don’t like to be negative or focus on fat/calorie counts but dang!!!!!

That’s right, I said it, Dang!

Now back to Zesty Italian Tortellini Salad, its cheese-stuffed tortellini but its served with a ton of nutrient-packed, delicious veggies.  This pasta salad is pretty awesome and tastes even better when made ahead of time.

This is how you make it:

Cook the pasta according to package directions then set aside; don’t rinse it though!

Mix half the dressing with cooked pasta while the pasta is still hot.

Put the pasta in the fridge to cool.

Meanwhile, prep the veggies.

Once cooled, add in veggies and remaining salad dressing to the cooked tortellini; season the veggies with salt and pepper.

Mix well.

Refrigerate until you’re ready to serve.

Taste and adjust seasoning before serving.

Olivieri 3 Formaggi Rainbow Tortellini [6]

You can feel free to switch this up with any pasta you’d like.  If going with unstuffed pasta then I’d measure 3 cups of pasta; rigatoni, fusilli, macaroni… you get the ides 🙂

A super simple recipe for Tortellini Salad with crunchy veggies and a Tangy, Zesty Italian Vinaigrette; perfect for your next BBQ!


Ingredients

Scale

250 g Package of tortellini, cooked according to package directions

1/2 Cup Zesty Italian dressing (Kraft)

1 Medium tomato, diced

1/2 Small red pepper, diced

1/2 Small yellow pepper, diced 

2 Stalks celery, diced

1/4 Cup red onion 

Salt, to taste

Pepper, to taste


Instructions

Cook the pasta according to package directions then set aside; don’t rinse it though!

Mix half the dressing with cooked pasta while the pasta is still hot.

Put the pasta in the fridge to cool.

Meanwhile, prep the veggies.

Once cooled, add in veggies and remaining salad dressing to the cooked tortellini; season the veggies with salt and pepper.

Mix well.

Refrigerate until you’re ready to serve.

Taste and adjust seasoning before serving.
