Sweet onion infused Dijon vinaigrette with spring fresh vegetables and Boston lettuce.

Boom.

If that doesn’t scream “Spring has Sprung” then I don’t know what does 🤷‍♀️

In a large bowl, whisk together the oil, vinegar, dijon, garlic powder, salt and pepper.

Add in the red onion and let it sit for about 30 minutes.

Add in the celery and then add in the Boston lettuce.

Mix well.

Taste and adjust seasoning.

Serve immediately.

Description

Ingredients

Scale

1/4 Cup Extra Virgin Olive Oil

2 tbsp red vinegar 

1 tsp Dijon mustard

1 tsp garlic powder

1/2 tsp salt

1/4 tsp pepper 

1 head Boston lettuce, cleaned and broken into bite-sized pieces

1/4 red onion, sliced thin

1 stalk celery, sliced thin


Instructions

In a large bowl, whisk together the oil, vinegar, dijon, garlic powder, salt and pepper.

Add in the red onion and let it sit for about 30 minutes.

Add in the celery and then add in the Boston lettuce.

Mix well.

Taste and adjust seasoning.

Serve immediately.
