Spicy Nacho Potato Skins

Do you ever crave potatoes and cheese and sausage?  Well I did.  This is what I came up with!  Lol, I added tomatoes to feel less guilty.  Then we had it with a fresh green salad; voila a complete meal that is satisfying and still under 400 calories.  Really, you can have decadent meals but remember portion control, add in a fresh salad to complete the meal and you’d be amazed at how great you’ll feel 😉

A simple recipe for Spicy Nacho Potato Skins; Lazy Potato Skins with Cheese Sauce, sausage and tomatoes… yum!!

This is what you’ll need

500 g Lean spicy pork Italian sausage

8 Small Russet potatoes, skin on, scrubbed clean

½ tsp coarse salt

1 Medium tomato, chopped

2 Green onions, sliced

½ -1 Cup  Nacho Cheese Sauce

 

This is how you make it

Remove the meat from the sausage casings and add it to a nonstick frying pan.

Saute the sausage meat over high heat breaking up the meat slightly with a spoon, until the sausage is cooked through and there are some yummy crunchy darkened pieces; set aside.

Pierce the potatoes all over with a fork and then bake them until they are tender (in the microwave is a huge time saver). Otherwise, bake at 400 for about one hour.

When the potatoes are cool enough to handle, slice them in half lengthwise.

Spread the coarse salt evenly on a baking sheet (or cutting board or serving platter) and then lay the potato halves (skin side down) on the salt, push them down slightly so they are level and stand easily.

Then top with the tomato, green onion and then the hot Nacho Cheese Sauce.

Serve immediately.

Notes:

  1. I used a baking sheet because it was easier to work on.
  2. The potatoes and cheese sauce should be hot when you assemble these.
  3. Any sausage will work here but I liked the contrast between the spicy meat and the Nacho Cheese Sauce.
  4. This will be a great addition for any holiday party!
