Lazy Man’s Potato Skins

I’m calling this recipe Lazy Man’s because I took a lot of short cuts, and even used my microwave! You get the essence of the potato skin with the cheese and toppings in 15 minutes! Remember, potatoes are not inherently fattening, it’s usually what we do to them to earn them a bad reputation. In this recipe, the only fat is from a marginal amount of cheddar cheese and a touch of extra virgin olive, way healthier than the potato skins found in your favourite pub or restaurant.

Serves 4 – 6

1 tbsp extra virgin olive oil

Coarse salt

4 Large russet potatoes with skin on, cooked and then sliced into ¾ inch slices

½ Cup old cheddar cheese, grated

1 Medium tomato, diced

2-3 tbsp fresh chives, chopped

Pepper

Preheat your oven to broil (on high).

Drizzle the olive oil across the bottom of a nonstick baking sheet and then throw a pinch of coarse salt evenly across the pan.

Place the potato slices on top of the coarse salt and then evenly distribute the cheese across the slices and then top the cheese with the tomatoes, then the chives and then season with more of the coarse salt and some pepper.

Place the baking sheet into the oven when it’s preheated and broil until the cheese is melted and bubbly and the edges of the potatoes are slightly charred (about 2-3 minutes). Make sure you stay with the potatoes while they’re under the broiler because they can burn really quickly.

Serve immediately!

Notes:

  1. I cooked my potatoes in the microwave, just pressed the ‘potato’ button 4 times for 4 potatoes!
  2. This would be a great way to use up leftover potatoes.
  3. Feel free to use green onions in place of chives.
  4. Crispy bacon or sausage would be an awesomely yummy addition here 🙂
