Italian Rice Salad with Tomatoes 

This is the time of year when we have to get creative with the abundance of fresh tomatoes and herbs we have in our gardens.  Here I’ve taken a naughty (but delicious) starchy-carby side and lessened it’s evil ways by loading it up with fresh veggies and herbs 🙂  This dish is great as a make ahead or fresh, and is ah-mazing to take for lunch the next day.

Serves 8

1 Cup long grain rice – I used white (uncooked  and then cooked according to directions)

2 tbsp extra Virgin olive oil

1 tbsp white wine vinegar

1 tbsp balsamic vinegar

1 Clove garlic, crushed

1/2 tsp salt

1/4 tsp pepper

2 Medium tomatoes, chopped

A handful fresh basil, chopped

3 Green onions, sliced

Whisk together the olive oil, white wine vinegar, balsamic vinegar, garlic, salt and pepper in a large bowl.

Add in the hot rice; mix well.

Add in the tomatoes, basil and green onion and again, mix well

Taste and adjust seasoning.

Serve immediately or at room temperature

 

 

 

A recipe for Italian Rice Salad with Tomatoes; cooked rice mixed with tomatoes then tossed with a balsamic vinaigrette.
