Crockpot Loaded Potatoes

A recipe for Crockpot Loaded Potatoes; a dump and go recipe for cheesy decadent loaded potatoes where your crockpot does all the work!

Serves 6-8

6 Medium russet potatoes, (skin on), cleaned and cut into large chunks

2 Strips cooked bacon, crumbled

2 Green onions, sliced (reserve green tops for garnish)

1 tsp extra virgin olive oil

½ tsp coarse salt

¼ tsp pepper

1 Cup grated old cheddar cheese

½ Medium tomato, cut into chunks

Lightly grease the crockpot with cooking spray or olive oil before anything else then;

In the crockpot itself, mix the potato chunks, bacon crumbles, green onion, salt and pepper.

Top with the cheddar cheese.

Set your slow cooker to high and cook for 4 hours.

Garnish with the reserved green onion ends, sliced as well as half a medium tomato that you cut into chunks.

N9tes:

  1.  I like to cook a pack of bacon at a time, extra crispy and then store it in the freezer  in a tupperware container so I always have crispy bacon on hand; such a timesaver 🙂
