Planning ahead is key to meal prep.  My kids will ask me on Sunday what we’re going to have for dinner the following Thursday and I always have an answer!

Monday:

Mussels Steamed in a Dijon Mustard Cream Sauce (Mussels Dijonnaise)

Crusty Bread

As always you can go with store-bought bread.  Simply throw a loaf of bread in the freezer the day you buy it and take it out an hour before you sit down to eat, it’ll be just like fresh baked, oooh warm it slightly in the oven!

Tuesday:

Green Salad

…prep enough for two salads and then store half in the fridge for Friday’s dinner.

* Cook 2 cups of rice for tomorrow night’s dinner – 2 cups raw for 4 cups cooked.

Wednesday:

Spicy Bean Burritos

Served with:

Mexican Fried Rice

(Reserve the leftovers for Friday’s dinner)

 Thursday:

Spicy Mediterranean Roasted Chicken Breasts

 served with:


Baby Potatoes in a Dill and Scallion Vinaigrette

Italian Tomato Salad

Friday:

BBQ Steak

Serve with the leftover:

Mexican Fried Rice

and the remaining…
