Marinated Cauliflower Salad

This is the year!!! I say this every year. Of course, foolishly I’m referring to liking cauliflower. I think to myself maybe my mother’s right, maybe if I eat something enough, I’ll like it 🤷‍♀️

But no. No. I do not like cauliflower.

This recipe though came close. If you like cauliflower I think you’ll appreciate how the marinade compliments the gentle flavours and textures of the cauliflower.

I give this recipe a 10.

Honestly though, I still don’t like cauliflower.

This is how you make it:

Bring a pot of salted water to boil and cook the cauliflower for 3 minutes.

Meanwhile,  in a large bowl, whisk together the ingredients for the marinade; the oil, vinegar, soy sauce, garlic powder, salt and pepper.

Drain the cauliflower and add it directly to the marinade.

Let the cauliflower marinate for at least 1 hour.

Add in the green onion; mix well.

Taste and adjust seasoning just before serving.

Marinated Cauliflower Salad

A simple recipe to compliment the flavours and texture of steamed cauliflower, perfect for the season and it takes minutes to prep 🙂


Ingredients

Scale

1 Head of cauliflower, florets only 

1/4 Cup Canola oil

2 tbsp Rice wine Vinegar

1 tbsp sodium reduced soy sauce

1 tsp garlic powder

Salt, to taste

Pepper, to taste

3 Green onions, sliced


Instructions
