Japanese Carrot Ginger Dressing

Here I present my newest recipe, a homemade, copycat recipe of the awesome Japanese Carrot Ginger Dressing you get on the traditional green salad at your favourite Sushi place 🙂

This recipe is one I’ve been trying to figure out for years.  YEARS!

The green salad at every Japanese restaurant I go to is always my favourite dish and I’m pretty sure it’s free!

As the years have gone by and my kids are getting older I find it’s just a) too expensive to go to a restaurant for a meal and b) there’s no way I’m getting my family into a Japanese restaurant 🤷‍♀️

Then Pinterest to the rescue!  I saw a recipe calling for carrots.  I did some research and sure enough carrots make up a significant part to this dressing.

All these years, I thought it was pickled ginger however it’s shredded carrots!  I was so wrong!

This dressing makes me happy.

I used my  food processor to puree the onion and ginger with the oil, soy sauce, vinegar, sugar and salt.

I hit Pulse to combine the ingredients.

I then added in the carrot and hit pulse many times; I wanted the carrot to be shredded, not pureed.

Very important!!! This dressing has to rest in your fridge for 24 hours for it to taste like the ginger dressing at your favourite sushi bar 🙂

So I let it rest!

Then I devoured my salad!

I love to have a green salad with mashed potatoes.

To prepare the salad simply use clean, crisp lettuce such as iceberg then add tomato, cucumber and red onion then drizzle some of the Japanese Carrot Ginger Dressing on top.

A homemade, copycat recipe of the awesome Japanese Carrot Ginger Dressing you get on the traditional green salad at your fav Sushi place 🙂


Ingredients

Scale

1/8 0f an Onion, peeled (large wedge)

1 inch piece of fresh ginger, peeled

1/3 Cup canola oil (or any mild oil)

2 tbsp sodium-reduced soy sauce

2 tbsp rice wine vinegar

1 tbsp sugar

1/2 tsp salt

1 Small carrot, peeled


Instructions

Use a blender or food processor; puree the onion and ginger then add in the oil, soy sauce, vinegar, sugar and salt.  Pulse to combine.

Add in the carrot and pulse many times; you want the carrot to be shredded, not pureed.

Very important!!!  This dressing has to rest in your fridge for 24 hours for it to taste like the ginger dressing at your favourite sushi bar 🙂

Notes

  1. You can go with a 1/2 tsp dried ginger in place of fresh ginger.
