Grilled Pickle Chicken 

I love pickles. Salty, crunchy, delicious pickles. I always have a jar in my fridge. While I do make my own in the summer (Recipe Here)… I tend to just buy my favourite zesty garlic pickles to snack on.

I’ve heard of marinating chicken in pickle brine for fried chicken recipes but I’d never tried it. I can’t believe I’ve just thrown out the pickle juice all these years 🤦‍♀️🤦‍♀️🤦‍♀️. What a waste 😣

To keep things on the lighter side I marinated boneless, skinless breasts that we then barbecued. The flavour from the marinade is tangy and delicious without being over the top. Mark my words, pickle juice will never be wasted in this house ever again 💪

This is how you make it:

Pour the pickle juice over the chicken in a large bowl or air tight container.  

Cover and transfer to the fridge.

Marinate for 24 hours.

Remove the chicken from the brine and pat it dry dry.

Season lightyly with salt and pepper.

As always, let the chicken rest for 10 minutes before serving!

Grilled Pickle Chicken 


Description

A recipe using the leftover juice from salty, crunchy, delicious pickles to marinate chicken then barbecue it to perfection 🙂


Ingredients

Scale

4 Boneless, skinless chicken breasts

The brine from 1 jar of pickles

Salt, to taste

Pepper, to taste


Instructions

Pour the pickle juice over the chicken in a large bowl or air tight container.

Cover and transfer to the fridge.

Marinate for 24 hours.

Remove the chicken from the brine and pat it dry dry.

Season lightyly with salt and pepper.

Grill the Chicken according to my guide here.

Notes

  1. Go with any cut/type of chicken.
  2. Use any pickle brand you prefer 🙂
  3.  Never throw away pickle juice!!!
