Creamy Potato Salad with Peas

Here I present a healthy recipe for a Creamy Potato Salad with Peas (and corn), a total pantry dish using frozen peas and corn in a homemade, tangy dressing!

It’s bbq season!!! Ish! It’s about that time to shake off your favourite recipes to compliment your favourite bbq feast. Potato salad, pasta salad, Caesar salad, garden salad, you name it. What do all of these dishes have in common you ask?

They’re expensive

They are so much more expensive than I think they’ve ever been. Our favourite Caesar salad dressing that we buy to save some time is almost $9.00 a bottle, never mind the price and the lettuce.

I love, love, love to add tons of fresh crunchy veggies to all my salads but man, who can afford it?

I need a plan

I love fresh produce and vegetables but my grocery bill is getting painful.

Now I’m trying to find ways to use frozen vegetables in place to fresh where I can.

Frozen veggies are packed at their freshest best. I strongly recommend keeping some in your freezer for easy, on-hand recipes.

The recipe you see here has frozen peas and corn only, I did that on purpose but please feel free to add any more veggies you’d like here, they’ll totally work.

The peas and corn provide a slight crunch and sweetness that pairs well against the buttery potatoes.

Cover the potatoes with water and bring them to a boil.  

Drop the temperature to medium-low.

Simmer for 25 minutes then add frozen peas and corn. 

Cook for 3 minutes.

Meanwhile prepare the dressing; whisk together the miracle whip, vinegar, sugar, salt and pepper in a large bowl, set aside.

Drain the potatoes and veggies and add them to the dressing.

Mix well.

Ingredients

Scale

78 Small red skinned potatoes, scrubbed clean

1 Cup frozen peas

1 Cup frozen corn

1/2 Cup Miracle Whip

2 tbsp white vinegar

1 tsp sugar

1/2 tsp salt

1/4 tsp pepper


Instructions

Cover the potatoes with water and bring them to a boil.  

Drop the temperature to medium-low. 

Simmer for 25 minutes then add frozen peas and corn. 

Cook for 3 minutes.

Meanwhile prepare the dressing; whisk together the miracle whip, vinegar, sugar, salt and pepper in a large bowl, set aside.

Drain the potatoes and veggies and add them to the dressing.

Mix well.

Cover and cool for 2-3 hours.

Taste and adjust seasoning just before serving.
