Beer Marinated Grilled Chicken

With barbeque season here, we can all use more recipes for lean and delicious, skinless chicken breasts. Chicken breasts are high in protein and low in fat and marinating them adds virtually no calories to the dish while providng the most incredible flavour.

Serves 4

1 Cup beer (whatever you have on hand, I used Heineken)

¼ Cup cider vinegar

¼ Cup extra virgin olive oil

The zest of a lemon

The juice of a lemon

4 Cloves garlic, grated on the zester/microplane or crushed

1 tsp dried oregano (or 1 tbsp fresh chopped)

½ tsp salt, plus extra

¼ tsp Pepper, plus extra

4 Skinless, boneless chicken breasts, fat trimmed away

in a large deep dish (I use a lasagna dish) add the beer, vinegar, oil, lemon juice and zest, the garlic, oregano, salt and pepper; mix well.

Add the chicken breasts to the dish.

Pierce the chicken with a fork, several times per breast. Flip the chicken breast and pierce the other side.

Try to coat the top chicken breasts with the marinade.

Let the chicken marinate for 20 minutes to one hour; don’t let it marinate any longer than that otherwise the chicken will breakdown too much.

Rotate the chicken at least once.

Once the chicken has marinated, grill it according to the instructions for “My guide for awesome Grilled Chicken”.

As the chicken is grilling, lightly season both sides of the chicken breasts, while there is salt and pepper in the marinade, the chicken still needs to be seasoned as it’s cooking.

Notes:

  1. This will work will as marinade for bone-in chicken as well.
  2. Yum!
