Warm Potato Salad

The humble potato. Incredible. Versatile. Delicious.

I love making this dish because I can switch up the potato I use, the vinaigrette and the herbs thereby creating a totally different potato salad with each simple twist.

Years ago I made this with a boyfriend’s mother for a bbq I was attending. I was going for white wine vinegar but she suggested balsamic. Her dressing was better than mine!!! She asked me if that was a good thing and it was! I love learning. Then student surpassed teacher and this vinaigrette was born with the addition of lemon 🍋

This is how you make it:

Put the potatoes in a pot with water and bring it to a boil, once boiling, drop the heat to medium-low and cover the pot with a lid.

Let the pot simmer until the potatoes are fork tender.

Meanwhile whisk together the oil, vinegar, lemon juice, salt, pepper, garlic and green onion in a large serving bowl.    

Once the potatoes are cooked, drain them then add them back into the hot pot they were cooked in (this will help any water left on the potatoes evaporate).

Just before adding the potatoes to the bowl with vinaigrette, mix the vinaigrette again.  Add the potatoes and add mix well to coat.

You can serve the potatoes right away or you can let them rest, taste and adjust seasoning before you serve them!

A simple recipe inspired by French potatoes made with buttery new potatoes and a tangy vinaigrette with balsamic and garlic 🙂


Ingredients

Scale

1/4 cup extra virgin olive oil

2 tbsp balsamic vinegar

1 tbsp lemon juice 

1/2 tsp salt 

1/4 tsp pepper 

1 clove garlic, crushed

3 green onions, sliced 

680 g/1.5 lb baby potatoes


Instructions
