Roasted Teriyaki Mushrooms 

I don’t know about you but I can’t have enough mushroom recipes in my repertoire; I love mushrooms! Roasting mushrooms adds an incredible depth of flavour and this dish comes together in 20 minutes! Can I also point out that this would be a perfect side to any holiday dinner!?!

Serves 4

2 tbsp sodium-reduced soy sauce

1 tbsp extra virgin olive oil

3 Cloves garlic, crushed

454 g Mushrooms, sliced

Coarse salt

Pepper

Preheat your oven to 425.

In a large bowl, whisk the soy sauce, extra virgin olive oil and garlic together and then add in the mushrooms, coating them in the sauce completely.

Transfer the contents of the bowl to a roasting dish and season the mushrooms with the coarse salt and pepper.

Roast the mushrooms for 20 minutes, shake the pan at least once to ensure nothing sticks and burns.

Serve immediately.

Notes:

  1. Feel free to use cremini mushrooms or any mushrooms of your choice, portobello would rock!
  2. Adding ginger would be awesome too, about one tbsp grated (I didn’t have any on hand so I didn’t, otherwise I would have).
