Pasta Pesto alla Carlofortina 

Have you ever heard the saying, “you don’t know, what you don’t know”?  Well that was me!  I didn’t know about Pesto alla Carlofortina, at all!  I’d never heard of it, seen it, tasted it, dreamt of it but there it was!

Now from my very limited research since I don’t speak Italian, the authentic dish uses smoked filets, I went with a can of tuna 🤷‍♀️

It totally works.

For this absolute deliciousness – that can be ready in 12 minutes!!! You will need: 1 Batch of Pesto Sauce (which can be made days ahead of time), a 375 g box of spaghetti, cooked according to package directions, 1 cup of the pasta water, reserve just before straining the pasta and a 198 g / 7oz can f good quality tuna packed in oil, drained.

1 Medium tomato, chopped

Combine the cooked pasta with half of the pesto sauce and the reserved pasta water.  Mix well and set aside.

In a large bowl, add the tuna, remaining pesto and the chopped tomato.

Add in the pesto pasta.

Mix well and serve immediately!

Pasta Pesto alla Carlofortina 


Description

Fresh pesto tossed on warm spaghetti then mixed with tuna and fresh tomatoes.  It is summer’s bounty mixed with pantry items, dinner can be ready in 12 minutes!

 


Ingredients

Scale

1 Batch of Pesto Sauce

375 g box of spaghetti, cooked according to package directions

1 cup of the pasta water, reserve just before straining the pasta

198 g / 7oz can f good quality tuna packed in oil, drained

1 Medium tomato, chopped


Instructions

Combine the cooked pasta with half of the pesto sauce and the reserved pasta water.  Mix well and set aside.

Notes

  1. The pesto can be made ahead of time and you can have dinner on the table in like 12 minutes!!!!!
