Melting Potatoes

I had never been a Sweet Potato fan until I discovered Melting Potatoes!  

They have the texture of velvet but the skin is chewy and crunchy, the butter seems to mix with the natural sugars in the sweet potato to produce a caramel flavour and the coarse salt adds another level to the crunchy sensation.

This recipe is really easy to prepare and low maintenance to cook.

This would be a welcomed addition to any and all Easter meals!

This is how you make them:

 

Preheat your oven to 425.

Slice the sweet potatoes into 1 inch discs.

Place a little piece of butter onto each disc, reserving half the butter for the opposite side after its flipped.

Season with the coarse salt and pepper.

Roast for 20 minutes, then flip the potato slices.

Top evenly with the remaining butter and again, season with coarse salt and pepper.

Roast for another 20 minutes.

Serve immediately!

This recipe for sweet potatoes should really be called Caramelized Sweet Potato slices that turn to heaven in your mouth because they melt like sugary butter!


Ingredients

Scale

2 Large sweet potatoes, scrubbed clean

2 tbsp salted butter, cut into pieces

Coarse salt, to taste

Pepper, to taste


Instructions

Preheat your oven to 425.
