Ultimate Fat Free Dessert

Sounds yummy, doesn’t it???

Serves 4

2 Cups fat free plain yogurt

2 tbsp honey

Juice of half a lemon

2 – 3 Cups of fresh berries

–  Line a sieve with a coffee filter and place over a bowl.

–  Pour the yogurt into the coffee filter, depending on the size of the filter you may need to do with twice

–  Leave the yogurt to drain for at least 45 minutes, up to an hour and a half.  You can leave it to drain on the counter or the fridge, I just left it on the counter.

–  Meanwhile clean and portion the berries.  Use your imagination here; strawberries, raspberries, blueberries, blackberries, you get the idea (and I can’t think of anymore berries!).

–  After the yogurt has drained, discard the liquid and pour the thicken yogurt into a bowl.

–  Add the honey and lemon juice and mix well.

–  Top the berries with the yogurt mixture.

–  To make it look extra fancy garnish it with a sprig of fresh mint.

Notes:

  1.  Taste the yogurt mixture before you top the fruit to adjust the sweetness to your preference.  Feel free to add more honey; it is fat free and naturally sweet.
