Gooey Mac and Cheese

 

Here I present a recipe for homemade Gooey Mac and Cheese that is soul-soothing delicious and ready in the same amount of time as the boxed stuff!

One of the hardest things to do as a mother is watch your child suffer.  In this instance, I mean emotionally.  My son didn’t make a team that he tried out for and the rejection nearly killed me.

Me!

I took it so much worse than my son did.

I felt so bad that when he asked if I could make him homemade Mac and cheese for his school lunch the next day, I made it.

I made this very recipe for my baby boy… man if he ever sees this post, I’m in trouble!

Cook the macaroni according to package directions then strain and set aside.

Meanwhile whisk together the milk, corn starch, salt and cayenne.

Return the pot to the stove over medium heat and add in you butter then flour; when the butter is melted, mix well (use a whisk).

You are making a roux here and as such are looking for a wet sand look.

Keep stirring the mixture for about one minute, this will get rid of the raw flour taste.

Slowly whisk in the milk, stirring constantly.

As the milk sauce thickens you can turn the heat down on the pan then add in the cheddar. (Note: I was too lazy to grate the cheese so I just sliced 160 g of cheddar off the block!)

Mix well.

Add in the noodles and again, mix well.

You can thin out the dish with more milk if you’d like but I really like the goo factor here 🙂

Ingredients

1 3/4 cup macaroni noodles, raw

1 1/2 cup milk

1 tsp cornstarch 

1/2 tsp salt 

Pinch cayenne 

2 tbsp butter 

2 tbsp flour

1 cup grated old cheddar cheese 


Instructions

Cook the macaroni according to package directions then strain and set aside.

Meanwhile whisk together the milk, corn starch, salt and cayenne.
