Fiesta Lime Chicken

Here I present my recipe for Fiesta Lime Chicken; chicken breasts marinated in a zesty lime sauce, smothered, and baked with Cheddar cheese, then topped with fresh Pico de Gallo.

And just like that, its September!

Summer is coming to an end

Truth be told, I burned a pumpkin spice candle, as soon as our heat wave ended. I have channelled cold weather vibes, specifically because I miss my oven. this dish can be made year round (minus heat waves), and although it looks complicated – it’s super simple… and delicious 🙂

This is how you make it

Start with the marinade .

Prepare the marinade, by mixing all of the ingredients together.

Add the chicken.

Cover, and marinate in the fridge for 2-4 hours.

Meanwhile, prepare the fiesta ranch sauce by mixing all of the ingredients together.

Prepare the Pico de Gallo by combing all ingredients together.

Once the chicken has marinated, preheat your oven to 350.

Add the oil to an oven-safe frying pan.

Heat the pan to medium-high, once hot, add in the chicken breasts.

Cook for 3 minutes, then flip.

Cover the chicken breasts evenly with the fiesta ranch sauce.

Top evenly with the grated cheese.

Transfer to the preheated oven.

Bake for 20 minutes (thicker chicken breasts will need more time to cook).

Once cooked, let the chicken rest for 5 minutes.

Top with the Pico de Gallo.

Ingredients

For the marinade

1/2 cup chicken stock

3 tbsp lime juice

1 tbsp soy sauce

1 tsp cumin

1/2 tsp salt

1/4 tsp pepper

Fiesta ranch sauce

1/4 cup sour cream

1/4 cup ranch dressing

1 tbsp lime juice

Pico de Gallo

1 Large tomato, chopped

1/2 Medium red onion, diced

1 tbsp lime juice

Salt, to taste

Pepper, to taste

Fiesta Lime Chicken

1 tbsp Canola oil

34 Boneless, skinless chicken breasts

1/2 Cup grated old cheddar cheese


Instructions

Start with the marinade .

Prepare the marinade, by mixing all the  ingredients together.

Add in the chicken.

Cover, and marinate in the fridge for 2-4 hours.
