Classic Banana Bread

Here I present a recipe for a personal favourite; Classic Banana Bread – its moist and chewy and full of tons of banana deliciousness 🙂

Since Covid changed pretty much everything, I abandoned the grocery store as my favourite outing.

I used to love the grocery store

My kids would come with me; first in the cart then pushing the cart for me.

Then Covid hit

Long lines then bare shelves and silly circles that were “safe”, then masks.

I had the hardest time adapting to masks but really, who didn’t?

I switched to curb-side pickups. They’re easy and convenient but 9/10 there’s a problem.

Enter bananas

The bananas that inspired this recipe were already knocking on heaven’s doors when we got our order.

Slowly I’m making my way back to the stores, especially for our produce but man these prices are working my nerves!

This is how you make my Classic Banana Bread

Preheat your oven to 350 then grease your loaf pan with butter but I just used cooking spray.

Mix the flour, baking powder, cinnamon and salt together in a bowl then set aside.

In a large mixing bowl combine both sugars, the yogurt, oil, lemon juice and vanilla.

Add in the bananas and egg and mash everything together; I use a potato masher.

Once mashed, add in the contents of the flour bowl.

Mix well.

Transfer the batter to your prepared pan.

Gently tap the loaf pan on the counter to get rid of any air pockets.

Transfer the pan to the oven and bake for 60-70 minutes; until a toothpick comes out clean when inserted into the banana bread.

Ingredients

Scale

2 Cups all-purpose flour

1 tsp baking powder

1 tsp Cinnamon 

1/2 tsp salt

1/2 Cup White sugar

1/2 Cup Brown Sugar

1/4 Cup Canola oil

2 tbsp Plain Greek Yogurt or Sour Cream

1 tsp Vanilla extract

1 tsp Lemon juice

35 Over-ripe bananas

1 Large egg


Instructions

Preheat your oven to 350 then grease your loaf pan with butter but I just used cooking spray.

Mix the flour, baking powder, cinnamon and salt together in a bowl then set aside.

In a large mixing bowl combine both sugars, the yogurt, oil, lemon juice and vanilla.

Add in the bananas and egg and mash everything together; I use a potato masher.

Once mashed, add in the contents of the flour bowl.

Mix well.

Transfer the batter to your prepared pan.

Gently tap the loaf pan on the counter to get rid of any air pockets.

Transfer the pan to the oven and bake for 60-70 minutes; until a toothpick comes out clean when inserted into the banana bread.  

Notes

  1. More bananas makes foe a denser banana bread but its so yummy 🙂
