Chicken Noodle Soup

This is the perfect time of year for this recipe; it’s cold and everyone is rundown and best of all? Even though this is chicken noodle soup, you can use left over turkey in place of chicken and it will be equally delicious! Most importantly though, Merry Christmas!

Serves up to 8

1 Batch of my Chicken Stock (about 6 Cups)

The meat from 2-3 cooked chicken breasts (about 2 cups chopped, or shredded)

1 Medium onion chopped

2 Celery stalks, chopped

1 Medium carrot, chopped

1 796 ml can of Diced Tomatoes

2 Bay leaves

2 Cups of Whole Wheat Yolk free Egg noodles

Salt

Pepper

Combine all ingredients in a large pot and bring it to a boil.

Once its come to a boil drop the heat to low and cover with a lid and simmer for 45 minutes, up to an hour.

Taste and adjust seasoning.

Notes:

  1. This is a great way to use up some of your leftover turkey.
  2. You can use store bought stock in place of homemade in a pinch.
