Baked Spinach Dip with Fresh Spinach

So apparently it’s football season 🤷‍♀️

I know nothing about it.  Less than nothing.  It’s actually well documented here on LisaGCooks.com  🏈 

I do know good food though (also documented 😎).

This is a perfect dish that can be prepared ahead of time before you host any (virtual 🥺) football parties.

This spinach dip is chunky and cheesy and absolutely full of flavour.  The spinach shrinks down but doesn’t get watery.  My sister said it was the best spinach dip she’d ever had!

This is how I did it:

Preheat your oven to 375.

Combine the cream cheese, mayo, yogurt, red pepper, green onion, 1/2 of the mozzarella and the seasonings.

Add in the spinach leaves (I mixed the spinach in by hand).

Transfer to a greased oven-safe dish.

Top with the remaining mozzarella.

Bake for 30 minutes, until the cheese is melted and bubbling.

Description

Ingredients

Scale

250 g Light cream cheese, at room temperature

1/4 Cup light mayonnaise

1/4 Cup plain Greek yogurt

1/2 Red pepper, diced

3 Green onions, sliced

 1 tsp garlic powder 

1/2 tsp salt 

1/4 tsp pepper 

1 Cup grated mozzarella, divided 

227 g Fresh spinach


Instructions

Preheat your oven to 375.

Combine the cream cheese, mayo, yogurt, red pepper, green onion, 1/2 of the mozzarella and the seasonings.

Add in the spinach leaves (I mixed the spinach in by hand).

Transfer to a greased oven-safe dish.

Top with the remaining mozzarella.

Bake for 30 minutes, until the cheese is melted and bubbling.

Notes

  1. Leave the cream cheese out over night to come to room temperature.
  2. Plain yogurt or sour cream will work in place of Greek yogurt.
